Chicken, broccoli, and rice all in one easy-to-prepare pot. Smooth and comforting, this cheese-filled baking dish has it all!
* Ingredients:
° 3 tablespoons of olive oil
° 1/2 yellow onion, finely chopped
° 1 lb. chicken breasts cut into bite-size pieces
° 2 minced garlic cloves Salt and pepper to taste
° 1 cup long grain rice, uncooked
° 2 and a half cups of chopped broccoli
° 2 and a half cups of chicken broth
° 2 cups grated cheddar cheese
* Preparation:
In a large saucepan, sauté the onions in 2 tbsp of olive oil over medium heat. Season the chicken with salt and pepper. Increase the temperature of the round to medium high heat and add the chicken. Brown the chicken pieces and add the garlic. Push the chicken to one side of the pan and add 1 tbsp of olive oil to the other side. Add the rice to the olive oil and sauté for a few minutes. Add the chicken broth and bring to a boil. . Cover the pan. Stew for 12 min . Add the broccoli and mix. Simmer for more 8 minutes over low heat. Remove from the heat and add 1/2 cup of cheese. Mix. Add the rest of the cheese and let it melt for a few minutes. To serve!
