12 large eggs

1/2 cup milk (I used skim)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

3/4 cup shredded cheddar cheese divided


8 ounces ham steak cubed

2 green onions sliced thin


Step 1: Ready the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply a generous amount of cooking spray in muffin cups.

Step 3: In a large mixing bowl, add the milk, spices, and eggs. Whisk until well combined.

Step 4: Add in ham, onions, and 1/2 cup of shredded cheddar cheese. Stir until well combined.

Step 5: Fill each greased muffin cup with the mixture.

Step 6: Sprinkle each generously with the remaining shredded cheese.

Step 7: Bake inside the preheated oven for 25 to 30 minutes or until a toothpick comes out clean after inserting in the middle of one muffin.

Step 8: Remove from the oven and let the muffins sit on a wire rack to cool at room temperature.
